- 450 gsweet potatoes1 lb (1 large or 2 small), cut into ¾-inch cubes
- 225 ggreen beans½ lb, ends trimmed
- 2 tbspolive oil
- 1 tspkosher saltdivided
- 0.5 tspblack pepper
- 1 tspdried thyme
- 0.5 tspdried sagerubbed
- 0.5 tspgarlic powder
- 120 mlchicken broth (optional)½ cup, for the pan sauce
- 1 tspmaple syrup (optional)for the pan sauce
- 1 tspDijon mustard (optional)for the pan sauce
- 1 tbspunsalted butter (optional)for the pan sauce
- 4 tbspcranberry sauce (optional)store-bought or homemade, instead of the pan sauce
Steps
- 1

Heat the oven to 425°F (220°C) and line a rimmed baking sheet with parchment or foil. Cut the sweet potatoes into ¾-inch cubes, trim the green beans and pat the turkey dry with paper towels.
💡 If the turkey was frozen, thaw it in the fridge for about a day, never on the counter.
- 2

Toss the sweet potatoes on the pan with 1 tbsp of the oil, ½ tsp of the salt and half the pepper. Spread them out and roast for 10 minutes.
⏱ 10 min - 3

Meanwhile, rub the turkey with ½ tbsp oil, the thyme, sage, garlic powder, the rest of the pepper and all but a pinch of the remaining salt. Stir the sweet potatoes, push them to the sides and lay the turkey in the middle of the pan. Roast for 15 minutes.
⏱ 15 min - 4

Toss the green beans with the last ½ tbsp oil and the pinch of salt, scatter them around the turkey and roast 10 to 15 minutes more. The turkey is done when an instant-read thermometer in the thickest part reads 165°F (74°C). If it doesn't yet, roast 5 minutes more and check again. The sweet potatoes should be tender and the beans blistered.
⏱ 15 min💡 Tenderloins vary a lot in thickness, so trust the thermometer, not the clock.

Move the turkey to a board, tent it loosely with foil and let it rest 5 minutes. For the pan sauce, pour any juices from the pan into a small saucepan with the broth and maple syrup and boil until reduced by about a third, 3 minutes. Off the heat, whisk in the butter and mustard. Taste and adjust. Or skip the sauce and warm the cranberry sauce instead.
⏱ 5 min - 6

Slice the turkey across the grain and share it, the sweet potatoes and the green beans between two plates. Spoon over the pan sauce or a spoonful of cranberry sauce.
Make it easier

Next time: Next time, scatter a few pecans and a pinch of brown sugar over the sweet potatoes for the last 5 minutes, or roast a halved shallot with the beans.
A lighter plate: Skip the butter in the sauce and double the green beans for more vegetables on each plate.
