- 3 tbspunsalted butterdivided
- 0.5onionmedium, chopped
- 1celerystalk, chopped
- 1 clovegarlicminced
- 2 tspfresh sagechopped, or ½ tsp dried
- 1 tspfresh thymeleaves, or ¼ tsp dried
- 2 tbspfresh parsleychopped
- 0.5 tspkosher salt
- 0.25 tspblack pepper
- 2 tbspdried cranberries (optional)
- 180 mlvegetable broth¾ cup
- 1egglarge
Steps
- 1

Heat the oven to 375°F (190°C). Spread the bread cubes on a small baking sheet and bake 10 to 12 minutes, until dry and crisp but still pale. Chop the onion, celery, garlic and herbs while they dry.
⏱ 12 min💡 Day-old bread dries faster; stale cubes left out overnight can skip this step.
- 2

Melt 2 tbsp of the butter in an 8-inch (20 cm) oven-safe skillet over medium heat. Cook the onion and celery until soft, 6 to 8 minutes. Stir in the garlic, sage and thyme for 1 minute.
- 3

Take the skillet off the heat. Add the bread cubes, parsley, salt, pepper and cranberries if using, and toss. Taste a cube (there's no egg in yet) and add salt, pepper or sage if it needs it.
- 4

Whisk the egg with the broth in a measuring cup, pour it over the bread and fold until every cube is damp. Level it without packing it down and dot with the last 1 tbsp butter.
- 5

Cover the skillet with foil and bake for 15 minutes. Uncover and bake 10 to 15 minutes more, until golden and crisp on top.
⏱ 30 min - 6

Check the center with an instant-read thermometer: it must reach 165°F (74°C). If not, bake 5 minutes more and check again. Let it stand 5 minutes; the skillet handle is very hot.
⏱ 5 min💡 The thermometer is the reliable check; a browned top is only a rough guide. Reheat leftovers to 165°F (74°C) too.

Next time: Next time, brown a few chopped mushrooms with the onion, or stir in a small chopped apple for sweetness.
A lighter plate: Use whole-grain bread, add an extra stalk of celery and a handful of mushrooms, and use 2 tbsp butter in all.
