Ingredients
- 680 ggreen beans1½ lb, trimmed and cut in half
- 1 tbspkosher saltmost of it for the blanching water
- 3 tbspunsalted butter
- 225 gcremini mushrooms8 oz, sliced
- 2 clovesgarlicminced
- 3 tbspall-purpose flour
- 240 mlvegetable broth1 cup
- 240 mlwhole milk1 cup
- 0.25 tspblack pepper
- 1 pinchground nutmeg (optional)
- 1.5 cupscrispy fried onionsstore-bought (usually coated in wheat flour)
Steps
- 1

Prep: trim the green beans and cut them in half. Slice the mushrooms. Mince the garlic.
- 2

Heat the oven to 350°F (175°C) and butter a 2-quart baking dish. Bring a large pot of water to a boil with 2 tsp of the salt, add the green beans and cook 4 to 5 minutes, until bright green and just tender. Drain and rinse under cold water to stop the cooking.
- 3

Melt the butter in a large skillet over medium-high heat. Add the mushrooms and cook, stirring now and then, until they release their liquid and brown, 6 to 8 minutes. Stir in the garlic for 30 seconds.
- 4

Sprinkle the flour over the mushrooms and stir for 1 minute. Slowly whisk in the broth, then the milk, and simmer, stirring, until thick enough to coat a spoon, 4 to 5 minutes. Add the pepper, nutmeg and ½ tsp salt. Taste and adjust the salt and pepper.
⏱ 8 min - 5

Stir in the green beans and half the fried onions, then spread everything in the baking dish.
💡 You can make it up to this point a day ahead and refrigerate it; add 10 minutes to the bake.
- 6

Bake for 25 minutes, until bubbling at the edges. Scatter the rest of the fried onions over the top and bake 5 minutes more, until golden.
⏱ 30 min💡 Reheat leftovers until hot all the way through, 165°F (74°C) on an instant-read thermometer.
